I'm on my 3rd hemi and I'll probably go with the V6-quad cab for my next one as well. I just don't need anything bigger anymore. I'm only towing about 4-5K now and that V6 has a max tow 200lbs from my hemi. The lower price combined with better mpg is just too good to pass up. I've found Laramies with the V6 but nothing higher. Harder to find but they are out there. Much more common in the quad cabs as well.

My uncle-in-law has a 2021 Laramie Hemi. If he's willing, I'll have my wife drive it today when he visits. Did you say a max tow of 200lbs? Did you mean 2K?
