I’m considering adding a delete kit to my 2019 Ram 2500 with the 6.7 Cummins engine and wanted to get some input. I’m mainly looking for recommendations on reliable kits, installation tips, and potential performance gains or drawbacks.

Are you talking about deleting the emissions equipment? If so, you do know that deleting the emissions equipment is illegal, right? Unless you are asking for shops in Canada, I’m not sure what information you are looking for someone to provide.
 
I went with a full 6.7 cummins delete kit on my '19 Ram last year to fix the constant DPF clog issues, and it completely transformed the truck's throttle response and overall reliability. Just make sure you pair it with a solid tuner and take your time with the EGR install.
